Weight Watchers Chicken Meatloaf Recipe
1 pound of ground chicken
1/2 cup of seasoned dry breadcrumbs
3/4 cup chunky salsa
1 egg, beaten
1/4 teaspoon pepper
Mix all ingredients really well. Put into pan - shape into loaf. Bake at 350 degrees for 1 hour with tin foil on it, another 15-30 mins without the foil. YUM!!

Great idea using chicken! I also love salsa in my meatloaf.
